whos brewing NEIPA's? share your info.
« on: August 24, 2020, 11:48:15 AM »
I have brewed a few but the color has been darker then i want, I think it was do to the grain i was using( Viking Pale malt).
this time i used Golden Promise and Briess 2 row.
still fermenting, just started the cold crash today.
hoping for a yellow NEIPA this time laste few were brownish, but didnt have any cardboard or off flavors. I am careful with NEIPA's, closed transfers with Co2 in everything. this last one was Galaxy, Citra and Stratta hops.

My buddy does 10 gallon batches, here’s his version of “Amarillo Heaven “

For the dry yeasts: just rehydrate them in sterile water on a stirrer plate for 20 min or so: that’s all that’s necessary.

Faster starts don’t necessarily produce a better product.

I make a great beer now: for a full cone batch:

7.5 kg 2 row, 2.5 kg melanoidin. 100gm whole amarillo hops with 5 min left in a 1 hr boil.
Safale 05 yeast.

Get a few batches ahead so you can age it for a couple of months in the keg.

Use some Oats, I used steel cut Quaker Oats
put hops in at whirlpool, under 170F for 15-20min
multiple dry hops, I did 7days and 3days before kegging then cold crashed for 2 days.

Keg 1- Red Dog IPA
Keg 2- coconut brown
Keg 3- Peach Sour
Keg 4- Neveu Saison
Keg 5- ESB

Another tip and this isn't just for NEIPA's, it is how i transfer all my beers to kegs.
I have a gas connector on a tube that I hook to a bung and when I'm ready I swap bungs, my kegs are purged with Co2. Hook my liquid connector to my fermonster and open valve and start transfer.
I leave pressure in the keg so when I swap bungs it is forcing Co2 into the fermonster and purging the head space, I hold it a little crooked so it can escape. Once pressure is gone I push the bung in.
Super easy, not sure if it's worth it but my NEIPA's have not oxidized.
