Bitter as f@#k!

Having recently finally obtained a reliable means of temperature control, I thought I'd throw down a quick Coopers K&K to see how the system would run. Good news is, it runs like a dream. Holds the temperature within +/- a degree. Unfortunantly the bad news is i chucked in some hops after 7 days and will CC for 5 days. Took a sample after Day 9 and holy shit is it bitter! :o eye-wateringly so...if thats a word. Now, i have had this problem before and after a few weeks the bitterness has subsided significantly. Umm, and yes i must add that the hops have been sitting in the fridge for over 5 years! So i'm just putting it down to old hops and fingers crossed the bitterness mellows. Be keen to know if anyone else has used hops this old and what was the resulting taste. cheers.

I have used hops a few years old, but usually hop bitterness goes away as the hops age.
some sour beer brewers want aged hops for that and some other reasons.
did you add hops to the kit during the boil?
maybe the kit was messed up?
pretty sure just adding dry hops wouldn't really make the beer the more bitter.

**some info for new brewers that dont know bittering comes from the boil the longer you boil the hops the more bitterness can come from the hops. the later additions give you flavor and aroma**
there's more to it then that but thats a simple version  :)

also older hops will get a funky smell like cheese or feet  :o thats when you know its time to toss them, unless an Old Sock IPA is your thing ;D

hope that helps ya out.
and good on ya for getting temp control for fermentation it will make a big difference.

Nah mate, no boil. Just threw the hops in. 100g Warrior and 40g Simcoe, I've used Simcoe quite a lot in the past but know SFA about Warrior. cheers.

Warrior is a great bittering hop for IPA's High Alpha Acid and very clean/neutral.
surprised it was so bitter with no boiling. maybe something with that kit.

Yeah i had no idea it was a bittering hop or would not have used it. Oh well, live n learn. Bottled it this morning and its as cloudy as buggery. I would imagine due to the amount of hops used. On the plus side once you get past the initial hop-burn i can detect residual flavours from previous brews (as its now a 5th gen. US05 slurry). Nice citrusy back-bone there. Yummy. Silver lining and all that.
