Been a while... How about alcoholic Vanilla Creme Soda
« on: August 26, 2019, 04:04:34 PM »
Just put this out to brew...  tasted great!  Can't wait to try it!
D47 Yeast - 2 packets cause they were a little old...
19 liters of water
2 TBS Butter Extract
6 TBS Vanilla Extract
1 can 6oz Pineapple Juice
10 Cups rax cane sugar
2 cups Light Brown Sugar
2 cups Dark Brown Sugar
2 TSP Crèam of Tartar
5 Tsp Yeast Nutrient
2 TSP Yeast Energizer
5 TSP Pectic Enzyme
I heated it up to 165 F for 10 mins then cooled it down to 85 F with my Wort Chiller and tossed the yeast.  It was bubbling away nice and happy the next day.  I forgot to take a hydrometer reading but if my math and instincts are right it should be at that sweet spot of 8% that I love so much.  I will back sweeten to determined taste.  I like mine pretty dry.  So, I am thinking 1 cup raw sugar, 1/2 cup of both Light and Dark Brown Sugars made into a simple syrup with a TBS of Vanilla Extract then straight to the keg and cold crash so it doesn't kick into fermenting again.

What do ya'll think?
I have mixed drinks about feelings.

I would of held off on the extracts until fermentation was over or add to the keg.
sounds very interesting.
